Going Greek

Recipe for Spanakopita

The other day we were cooking Greek food and I got to partake in making Spanakopita a delicious appetizer which I would like to share with you.


Ingredients

2 pkgs. frozen, chopped spinach
1 chopped onion
1/2 lb. Feta cheese, crumbled
1 cup Ricotta cheese
1 cup melted butter
6 eggs, beaten
1 lb. phyllo dough

Preparation

Stuffing

  1. Dethaw spinach for 2-3 hours before preparation
  2. Wash the spinach and ring out the water
  3. In the meantime sauté onions in 1/2 cup butter until golden.
  4. Once onions are golden brown add the spinach.
  5. Once the vegetable mix is cooked remove it from the heat
  6. Place it in a large bowl, add the cheeses and slowly pour in the beaten eggs mixing evenly.
  7. Do a taste test and see if it needs any more salt, pepper or other ingredients to spice it up.

Baking

  1. Butter a 12 x 18 x 2 inch pan to make sure the dough does not stick.
  2. On a separate plate begin to lay one phyllo sheet. You probably want to fold it a couple of times to make sure the contents wont fall out (It is also important to keep the other sheets moist so they don’t become hard and difficult to fold.
  3. Butter the dough and place in the spinach mix.
  4. Wrap the spinach mix in the dough in whichever shape you like and place it into the pan.
  5. Bake in a preheated 375 oven for 45-60 minutes or until browned.
Allow to cool and serve to guests (Serves 8-10)
